Not everyone is a citrus person so if you really like lemon like me double this ingredient.
Sometimes I think it's not enough but my kids clearly thought it was :)
Ingredients for Fish:
2lb Salmon, sliced into steaks
1/4 cup lemon juice
1/4 cup lime juice
2 tablespoons lemon zest
1/2 cup olive oil
5 garlic cloves, minced
1/2 teaspoon salt
2 teaspoons garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon crushed black pepper
2 teaspoons fresh cilantro
Ingredients for Garnish:
Butter for garnish
1/4 cup cilantro for garnish, roughly chopped
lemon or lime slices to garnish each piece of fish
Directions:
Preheat oven to 375 degrees.
In a medium size bowl combine all the ingredients except for the fish and butter and whisk.
Add your salmon steaks to a zip lock bag, pour in the marinade and refrigerate for an hour or two.
Line a large sheet pan with tin foil and give it a light spray with some avocado or coconut oil.
Place each piece of salmon on the tray.
Season with a little salt then add your lemon or lime slice and your pat of butter then finish it off with some crushed black pepper and cilantro.
Bake for 12 minutes or until your salmon is cooked to your liking.
