Ingredients:
2lbs Chicken Legs
3/4 can coconut milk - unsweetened
2 Tbsp Garlic - minced or crushed (if your not a garlic person use less)
1 Tsp Salt & Pepper
1 Tsp Red Pepper Flakes
2 Tsp Onion Powder
2/3 Springs of rosemary
Half onion chopped
1 Cup Pineapple Chunks
Smoked Paprika
Olive Oil
Directions:
Preheat oven to 375 degrees.
In a bowl add your chicken legs or any other chicken you have on hand.
Add your garlic, coconut milk, salt, pepper, red pepper flakes, onion powder, rosemary, chopped onion and drizzle the top with olive oil.
Give your chicken a good mix with your hands making sure every prices gets seasoned up right!
Line a sheet pan with foil and add your chicken. Sprinkle the top of the corn with paprika and add your pineapple chunks. Cover and into the oven it goes for 1 hour. Remove and uncover for 30 minutes.
