Easy Carne Asada Meatballs inspired by my Cuban MIL "Mother-in-law"

Ingredients:

2lbs - 80/20 Ground Beef

1 Tbsp Lemon Juice

1 Tbsp Lime Juice

1 Tbsp Apple Cider

2 Tbsp Olive Oil

2 Tsp Sea Salt

1 Tsp Ground Cumin

1 Tsp Dried Oregano

1 Tsp Garlic Powder

1 Tsp Onion Powder

1 Tsp Smoked Paprika

1 whole white onion - medium sized - diced small

1 Tbsp Garlic - minced

1/2 Cup Cilantro



Directions:


Preheat oven to 375 degrees.


In a small bowl add your lemon & lime juices, apple cider, spices, onions, garlic and cilantro. Mix well to incorporate. Pop it into your fridge for 30/60 minutes.


In a large bowl add your ground beef and pour in 1/2 of your mix! Make sure you incorporate it well into your meat.


Line a sheet pan with parchment paper or foil for easy clean up.


Now it's time to put your meatballs together! I don't make them too small or too big. I use my ice cream scooper.


Add them to your sheet pan and bake for about 25 minutes depending on the size. Less time for smaller balls more time for larger ones.


Add all the cooked meatballs to a serving dish and pour the remaining sauce all over the cooked meatballs and serve!


You can pair this up with yellow rice, salad or a veggie!
