Im always looking for east and quick meals to feed my family. For me week days are the hardest with so much going on so I turn to my insta-pot. When I make these meatballs I always make a big pot of sauce because I like to freeze it for another meal during the week. I have both my meatballs recipe and my sauce recipe below. You can even make the sauce alone or even use some Italian sausage instead of the meatballs! The only difference would be the cooking time, I would do 25 minutes on Medium.
Ingredients for Meatballs:
2lb 80/20 Beef
2 large egg
1/2 cup pork rind crumbs
2 teaspoons parsley
2 teaspoons Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon crushed black pepper
Ingredients for Sauce:
1 1/2 teaspoons olive oil
3 cans crushed tomatoes with basil - no salt added - (28 oz each)
2 tablespoons tomato paste
6 garlic bulbs (whole bulbs)
1/2 onion (split in half)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1 teaspoon sugar - of your choice
2 bay leaves
Fresh parsley - for garnishing
Directions for meatballs:
In a large bowl add all the ingredients and mix well.
Now you can start putting your balls together! Your going to use about 2/3 teaspoons of mix per meatball. After shaping each meatball place them on a baking sheet and set aside.
Directions for sauce:
Set your instant to sauté and add 1 1/2 teaspoons olive oil, garlic bulbs and 1/2 onion and lightly brown.
Add in all the other ingredients and give it a good stir.
Add in your meatballs one at a time gently.
Set your insta-pot to pressure cook for 15 minutes on medium heat.
After plating garnish with some fresh parsley!
Your all done!
