Ingredients:
1lb carrots, peeled
5 garlic cloves (I give mine a good mash with the side of my knife so its flat)
1 tablespoon fresh basil, minced
2 tablespoons vinegar, I use apple cider vinegar
1 tablespoon cumin seeds
1 tablespoon olive oil
1 teaspoon honey, I used Natures Hollow
Directions:
Heat oven to 375 degrees.
In a baking pan toss the carrots, garlic, vinegar, cumin seeds, olive oil, basil and honey.
Roast for 30 minutes or until the carrots are tender, stirring half way through.
