Red Beans & Pork Neck Bone Stew



I used my insta pot for this recipe but you could use a medium size stock pot instead. You will just have to cook it for a longer period of time.


Ingredients:

2 cans of red beans, I used simply balanced from Target, click here to purchase

1 can tomato sauce

2 tablespoons sofrito, link to recipe here or you can buy yours already made at the grocery store but read your labels

1 tablespoons olive oil

1/2 white onion

6 garlic cloves, crushed or minced

2lb pork neck bones

2 teaspoon cumin

2 large bay leaves, if you only have small use 3

1 teaspoon salt

1 teaspoon crushed black pepper

Garnish with cilantro



Directions:


Turn your instant to sautés and add the olive oil. When heated add your onion and cook for 2/3 minutes. Then add your garlic and cook for 1/2 minutes.


Add your pork neck bones and brown them on all sides 5/6 minutes. Its hard to get all your sides seared because they are all cut in different sizes but do the best you can. I just keep stirring them every few minutes.


Add the sofrito and let it cook with the neck bones for about 1/2 minutes then add in the tomato sauce.


Lastly add in all your spices and give it a good stir, making sure it is al incorporated.


Close your lid and turn your insta pot to pressure on medium for 40 minutes.


Let cool a little before serving and garnish with cilantro.


If your cooking in a stock pot what you will do is once all the spices are added make sure the pot comes to a boil then turn your heat to simmer for about an hour and a half or two hours. You want to make sure that the meat on those neck bones are tender.
