Ingredients:
1 1/2 lb Shrimp, chopped into pieces
2 tablespoons olive oil
4 cloves garlic, minced
1/2 white onion, finely diced
1/4 cup bacon
8 ounces cream cheese (room temp)
1/4 cup mayo
1 cup mozzarella, shredded
1/3 cup grated parmesan cheese
1/2 teaspoon paprika
Zest of 1 lemon
3 tablespoons lemon juice
2 tablespoon fresh cilantro, minced (plus a little more for garnish)
1 teaspoon pepper
1 teaspoon salt
1/4 cup crushed pork rinds (pulsed in a food processor, should resemble bread crumb consistency)
Directions: Preheat oven to 350 degrees. In a large skillet over medium heat add olive oil, once the oil is hot add the bacon. Let cook down for 3 to 5 minutes. Add onions and garlic and cook until translucent. Add shrimp and season with salt & pepper. Cook shrimp until they are pink about 3/4 minutes and set aside allowing mixture to slightly cool. In a medium bowl, stir together the rest of the ingredients (except the pulsed pork rinds) and mix. Add the shrimp mixture to the bowl and mix thoroughly. Transfer dip to a small baking dish and top with the crushed pork rinds and bake until bubbly and golden brown about 15/20 minutes. Garnish with the rest of the cilantro.
