Zucchini Boats

Ingredients:


4 medium zucchinis

1 lb ground meat (such as beef, turkey, or chicken)

1/2 cup diced onions

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

1 cup shredded cheese (such as mozzarella or cheddar)

1 cup tomato sauce


Instructions:


Preheat your oven to 400°F.


Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow "boat" shape. Place the zucchini halves on a baking sheet lined with parchment paper.


In a skillet, cook the garlic and onions until translucent. Add in the ground meat heat until browned. Add the seasoning, salt, and pepper, and cook for another 2-3 minutes. Add in your tomato sauce and cook for another 2 minutes.


Fill each hollowed-out zucchini boat with the meat mixture and top with shredded cheese.


Cover the baking sheet with foil and bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.


Remove from the oven and let cool slightly before serving.
